From the table you can see that a serving of 55 g of lettuce contains 0.08g of fat (this is so small that most nutrition labels record it as trace because it is under 0.5g per 100g of fat). If you were to eat a whole iceberg lettuce, weighing 550g, the maximum fat you could take from it would be 0.8g (under 1g of fat). You would need to eat a lot of lettuce to even get to 4g of fat (around 5 whole lettuces).

The fatty acid profile saturated: monounsaturated: poluunsaturated

                                        3      :               1             :            13.3

there is 1 unit of monounsaturated fat to 3 units saturated and for every 1 unit of monounsaturated fat there is 13.3 units polyunsaturated fat.

Lettuce contains very little fat. The majority of the fat is polyunsaturated. Of that which is polyunsaturated around 70% is omega 3 fatty acids (18:3 listed in the table - not ratios but represents 18 carbon chain with unsaturation starting at the 3rd carbon position) .
